#FoodComaSunday: The Brisket Edition

Last year, Eric treated himself to a new Traeger smoker, and we love it!

He’s been spending a lot of time researching and trying out different recipes. 

On September long weekend last year, he decided to make a prime rib. OMG, it was amazing! I would’ve changed up some of the spices used, but it was still awesome; so juicy and tender. 

We’ve done steaks, burgers, bacon-wrapped jalapenos, and various roasts. Some of these have been amazing, and some not so much.

At Christmas, he got a smoking cookbook and immediately found a recipe for brisket. At this point, he decided he was going to make a brisket on May long and thus began his plan. 

He researched what determines a good brisket vs. a bad one and how to handle and prepare it. He did his homework, and did it pay off!

This brisked was over 15 lbs and took up most of our counter space.

On Thursday evening, he prepared the rub and applied it to the meat. The smell was intense! Then he wrapped it and let it sit for the night. Cooking began just before 6 am and would continue into the evening.

It was so worth the wait! I have never had brisket before. You hear Howard Wolowitz talking about it all the time on “The Big Bang Theory,” but I had no idea what I would be in for. 

We had it with baby potatoes and asparagus. It was quite good; however, my favourite was the leftovers!

On Saturday, Eric made a lovely big brunch consisting of the leftovers. He used some of the meat to make a cheesesteak-style sandwich with onions and green peppers. He also fried some of the potatoes in a separate pan, and he cut up some lettuce, onions, green peppers and some cheese to add to our sandwiches. 

I opted to use the above ingredients plus some hickory BBQ sauce and mayo to make a potato hash. It was sooooooo good! So good that I chose to have it for supper and then for brunch again today. So, today is going to be food coma day. The way I feel right now, I don’t think I’ll be able to eat for a few days, lol!

We have now decided to have a special smoking day each long weekend over the summer:

  • May long brisket
  • July long fancy burgers
  • August long ribs
  • September long Prime Rib

It is going to be so awesome!
